OK so I really had not heard of this before, but we came close to this by accident before. At what we considered an above average sushi bar in Reno we liked, one time for their special all you can eat night, we told the chef, surprise us. Also while working in San Diego we had a visiting engineer from Japan working with us. He found what he told us was sushi equivalent to the best in Japan, in a small place in La Jolla. This was a husband and wife team handling a very small restaurant, and in all cases I don't think we ever ordered directly, but then I don't speak Japanese. As an aside there was a sign on the wall there, "We don't do California Roll"

So Tampa is going upscale with higher end restaurants, one of which is Kosen whose chef came to us from Masa a 3-Michelin-star restaurant in New York. We gave this a splurge.

This is a small venue 8 seats in a side room with the head chef and an assistant. Nice quiet intimate atmosphere. Among other things the chef prepared real wasabi which is a root grated freshly. No doubt us westerners probably don't know most wasabi here in the US is colored horse radish.

One course (the most expensive according to the chef) was wagyu beef (certified from Japan). It was really melt in your mouth delicious.

On to the nigiri courses, including uni (sea urchin). Not bad, but not my favorite.

The sushi making include some showmanship, with searing the saba (if I remember correctly)

So while a bit pricey, maybe no more so than ordering the same in CA. Thankfully we are in FL now and the cost of living here is much cheaper.
